Having not been to a Cafe Rio in almost a year we have to go it alone here! I use one 3 lb pork roast, one cup pace picante salsa one small can green chiles and 2 tablespoons of Bufalo Chipotle sauce (you can buy this at Smith's in Utah)... put all in the crock pot for 5-6 hours, at this point I add the juice of 1/2 to 1 lime and 1/2 cup brown sugar. I try a little at this point to see if I want more chipotle sauce... I keep cooking for 1-2 hours.
Here is the Tomatillo dressing recipe that is spot on! 3 fresh tomatillos, cut into quarters 1 package Ranch Buttermilk Dressing mix 1 cup mayonnaise or sour cream 1/3 to 1/2 cup buttermilk 1 cup fresh cilantro 2 cloves crushed garlic 1/4 teaspoon crushed cayenne pepper throw it all in the blender and blend away. Refrigerate one hour.

Tracy has an awesome Pork recipe for Tacos... I don't know how close it is.
Here is another that is supposed to be WAY close. My mom always makes it and it is really good
*Café Rio Pork*
3-4 lb. pork roast
Cook in crock pot for 6 hrs. on low covered half way with water
1 8 oz. bottle taco sauce
1 T Cumin
1 C brown sugar
1 can coke or dr. pepper (no diet)
Directions:
1. Cook Pork Roast in Crock pot for 6 hrs on low covered half way with water
2. Mix remaining ingredients
3. Add to shredded pork. Cook for an additional 3 hours.
and here is the dressing that is SO SO close. So so good. I make this and eat it for 2ish weeks on salads and with veggies.
*Café Rio Salad Dressing*
1 pkg.Buttermilk Ranch Dressing Mix
1 C.Butter milk
1 C.Mayonnaise
1-2 Cloves of garlic
½ -1/3 Bunch cilantro
½ tsp. Lime juice
½-1 Small jalapeno, seeds removed
Directions:
1. In blender puree all ingredients until smooth consistency forms
